I heard that your Gluten-Free
Sugar-Free cakes, frosting and cookies are good for an alkaline diet. Is
this true? This would be great because all I can eat now is fruit for dessert.
Yes. Our gluten-free sugar-free
Greek spice cake is the most alkaline followed by all the other chocolate
items. The apple juice, dates, spices, brown rice and pinch of sea salt
are all alkaline forming in the body. The gluten-free sugar-free products
are so good for you, you can eat them for breakfast!

this cake mix!!! This is the first allergy cake mix I have tried for my
daughter that actually tastes good. She is allergic to wheat, eggs, milk,
soy, and many other things, and often feels left out in food-centered celebrations
such as birthdays. Thanks to this cake mix, her fourth birthday party was
the tastiest, ever!
Also, it would be nice if you made the mix
in a smaller bag because this made a lot of cake. I froze some of it, but
would prefer to just make small batches fresh because it is so easy to make.

The label got wet and now has a
wet spot/smear. Is that OK?
We have simple labels
without a poly coat and chemical coating. Our company supports protecting
our eco environment in every way possible. We hope that every little
thing we do makes a difference!
What is the nutrition information
for the cakes? Our label indicates a realistic portion of 12 slices
per 2-layer cake. If you make 24 cupcakes divide all values in half.
For example, one cupcake has 125 calories. For all one-layer cakes the
values are half.

Is no sodium(salt) or
low sodium available? (our
cake mixes have 1 tsp of sea salt, the chocolate frosting has 1/2 tsp
of sea salt and the white frosting has 1/4 tsp of sea salt)

Do I need to refrigerate the
cake mix or the cake after I make It?
The mixes have a long shelf
life because they are made of dry ingredients. After the cake is made we
suggest covering any leftover after it has been cut. The cakes stay moist
for up to a week.
The only cakes that require
refrigeration after they are made are the sugar-free cakes made with dates.
Of course, if you prefer
to keep your dry mixes in the refrigerator to preserve freshness there will
be no harm in this and it will prolong the life of the mix. Especially the
gluten-free flavors.
Can I freeze leftover cake?
Yes. The cakes freeze
well.
There is a sticky layer
left in the pan. Did I make and bake the cake properly?
Yes. Our recipes leave
a thin film of cake on the pan. The cake should be easy to take out
of the pan when cool. Just simply leave the leftover film of cake in
the pan and wash the pan.
Do I need to grease or
flour the pan?
There is no need to
grease or flour the pans in preparation.
The cake shrinks when it
is cooling. Is that ok?
The cake will pull
away from the edges and seals in the moistness. When fully cooled, the
cakes are very easy to remove from the pans.
