Chocolate Cake with Raspberries

       "I made a 2-layer <gluten-free> cake using the cake mix and put raspberry jam between the layers. Then I coated the cake with the chocolate icing and decorated with raspberries. Next time, I'm going to do a similar filling with orange marmalade and then use OJ instead of water in the icing mix. Yum."

Recipes              

Fastest Chocolate Frosting: When the cakes or cupcakes come out of the oven sprinkle them with a generous amount of chocolate chips. Wait a couple minutes and then spread them like frosting. Yum!

Faux Ganache Frosting: start with frosting mix and add extra water till the frosting becomes runny enough to dribble down the sides. It will remain shiny and smooth on the surface. Re coat as needed by scooping frosting and re spooning on top until the frosting sets.

Kirsten's Coconut Frosting: start with "white chocolate" frosting mix and add coconut milk instead of water. Frost cake and sprinkle generously with coconut.

Raw Vegan Fudge: start with frosting mix and follow directions on the back except add 1/4 cup water and add enough more water to make into a stiff dough with your hands. Add nuts, coconut, raisins or any other goody and press the dough into a pan. Refrigerate to harden. Cut into squares when serving. For creamier Fudge add more liquid and refrigerate till ready to serve. For richer tasting fudge use coconut milk instead of water.

Faux Fudge Truffles: make raw vegan fudge above and roll into balls. Coat with melted chocolate chips or melted coating chocolate. Or roll in chopped nuts, coconut, cocoa or powdered sugar. Refrigerate to harden.

Sugar Free Topping: Slice or wedge 2 pts fresh strawberries. Add 1 tsp balsamic vinegar or 1 Tsp lemon juice. Mix till fruit is coated. Spoon onto the whole cake or slices of cake and drizzle with honey or agave syrup. Chopped pecans sprinkled on top also add a wonderful flavor to the fruit.

Strawberry Coulis: (makes 1 cup) put 8 oz fresh stawberries and 1/4 cup sugar into a blender and blend until smooth ( may substitute honey or agave syrup to taste)

Sugar Free "Frosting": Mix agave syrup and cocoa together until they form a paste. Spread on top of cake.

Jam Filling: Use your favorite fruit sweetened jam or marmalade. Spread  between layers or on top of cake.
